   MISSISSIPPI MUD PIE

   3      1 oz          Squares unsweetened chocolate
   1 1/2  Cups          Confectioner's sugar -- sifted
     1/2  Cup           Whipping cream
     1/3  Cup           Butter, or margarine
   3      Tablespoons   Light corn syrup
          Dash          Salt
   1      Tablespoon    Vanilla extract
   1      9-inch        Graham cracker crust
   1      Cup           Pecans -- chopped and divided
   3      Cups          Coffee-flavored ice cream -- softened and
divided
                        Sweetened whipped cream

Melt chocolate in a heavy saucepan over low heat; add confectioner's
sugar and next four ingredients.  
Cook, stirring constantly, until mixture is smooth.
Remove from heat; stir in vanilla and let mixture cool.
Spread 1/2 cup of chocolate mixture in graham cracker crust; sprinkle
with 1/4 cup pecans.
Freeze 10 minutes.
Remove from freezer and spread 1 cup ice cream over pecans;  freeze 20
minutes.
Repeat layers twice.
Cover pie and freeze at least 8 hours
Drizzle remaining chocolate mixture over pie.  Top with whipped cream
and sprinkle with remaining pecans.

Line a pie tin with chocolate cookie crumbs. Fill it with softened coffee ice
cream.  Spread cooled  hot fudge to cover. Put it in the freezer until you need
it. When you serve it, decorate each slice with chocolate syrup and place
whipped cream along the outside edge and a dollop on top at the point of the
wedge.
 
This may not be traditional. but it's a restaurant recipe designed to be good
and quick, but not labor-intensive.

I have NO idea how big a box of sugar, though.  I hope you can figure it
out.

                 Mississippi Mud Pie

   2                    Sticks butter or margarine
   2      cups          Sugar
   4                    Eggs
     1/2  cup           Cocoa
   1      teaspoon      Vanilla extract
   1 1/2  cups          Flour
   1      cup           Chopped pecans -- optional
                        Jar marshmallow creme

Preheat oven to 350 degrees.  Mix butter, 2 eggs and cocoa together. 
Then,add and mix in vanilla extract, 2 eggs, flour and pecans,if
desired. Put into a greased 11 x 14" pan.

Bake for 30 minutes. Remove from oven.  While cake is hot, spread 3/4
jar of marshmallow creme in top. Mix together 1 stick butter, 6 tbsp. 
milk, 1/2 cup cocoa, 1 box powdered sugar, 1 tsp. vanilla extract and 1
cup  chopped pecans.  Spread over marshmallow topping.
